Co-author of "A Spicy Touch", Karen Anderson, recommends making a garlic paste with your annual supply of garlic - easy and handy. Soak 1 lb. fresh garlic in water for about an hour to make it easier to peel. Cut off root end. Put garlic in food processor with about 1/2 cup of lemon juice or vinegar to make a fine paste. Add water if more fluid is needed. Store in airtight container - 8 to 10 days in refrigerator and up to a year in the freezer.
